Thai cuisine is based on the four pillars of taste.
- Salty– fish sauce, light soya sauce, shrimp paste, sea salt.
- Spicy -chilli peppers (red, green, fresh or dried), peppercorns.
- Sour – lime, tamarind, bamboo, pineapple, mango, green papaya and other sour fruits.
- Sweet – cane and coconut palm sugar, coconuts, fruits.
These flavours first come to mind when we talk about Thai cuisine. The secret of a good dish is the right balance of the flavours. At least two of these flavours are incorporated in a single Thai dish; some dishes may have all four.
- Salty dishes
Tom Yum Goong (Spicy Shrimp Soup) – Thai style, hot and spicy soup with prawns, lemongrass, lime leaves, chilli, mushrooms, galangal, etc. This soup is considered to be the most popular Thai soup. This versatile dish can be paired with almost any other Thai meal.
- Spicy dishes
Pad Kra Pow – Moo Saap/Gai (Fried Basil with pork/chicken) – This is a stir-fried dish with fresh chillies, garlic, French beans, basil leaves, soy sauce, green beans and a pinch of sugar. This dish is savoury, aromatic, and garlicky and it is usually topped with a fried egg. It can be made with two types of meat: pork and chicken.
- Sour dishes
Phad Prew Waan (Sweet and Sour chicken) – Coated in batter, deep-fried and stir fry with pineapple, fresh tomatoes & spring onions in sweet and sour sauce.
- Sweet dishes
Green Curry (kaeng khiao wan) – Cooked with Thai green curry paste, aubergine and Thai basil leaves in coconut milk. Thai green curry can be made with meat – chicken, duck and fish or with vegetables and it is usually eaten as an accompaniment to rice or round rice noodles.
Herbs & spices
Probably the most peculiar feature of any Thai dish is the herbs and spices. To give each dish the distinct taste of traditional Thai cuisine, one or more herbs and spices are incorporated in a single dish.
